Soba Noodles with Peanut Sauce, Figs & Fresh Vegetables from Ashley, Meta Street Bungalow
When my husband and stepsons sit out back brewing beer or bottle it in the kitchen, a mealtime usually comes around. A one-pot meal is a good solution to a quick meal for this group.
Soba Noodles with Peanut Sauce, Figs & Fresh Vegetables Recipe
2 tablespoons toasted sesame oil
2 tablespoons tahini
1 tablespoon peanut butter
3 1/2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 tablespoon grated ginger
4 cloves garlic
3 chopped cucumbers
1/2 cup roasted salted peanuts, roughly chopped
1/2 cup figs
1/2 cup tomatoes
1/2 cup green beans
Cook a package of soba noodles according to the package directions. Once cooked, run under cold water to cool. Drizzle with toasted sesame oil to keep them from sticking.
Peanut Dressing Recipe
Mix tahini and peanut butter in a bowl. Add soy sauce, rice vinegar, sesame oil, sugar, ginger, and garlic. Adjust flavors to taste.
Put noodles in a large bowl and toss with dressing until all noodles are coated. Place on top: handful of chopped peanuts, handful of figs, handfuls of additional vegetables. (I used tomatoes and green beans, but what ever vegetables you liketo eat and have in the kitchen will substitute just fine.) Grabbing noodles with the handfuls of additions, use salad serving spoons to scoop into individual bowls to serve.
