Granola. Stir-fried with Coconut Oil from Ashley, Meta Street Cafe
Sometimes we are so focused on doing things the same way, we don’t think outside the box and notice something else obvious (like, say, a giraffe walking by). For years, I have been baking granola on low heat on a cookie sheet, stirring occasionally. It’s pretty easy, but takes attention over a period of time. When my mom, recently, showed me that she did a quick stir-fry to make her granola, I converted.
Add any combination of the following, I use what I have in the cupboard. The oats and the coconut oil are key ingredients for the stir-fry method, but additional ingredients can easily be mixed & matched. Whole oats, buckwheat, millet, quinoa, pepitas, walnuts, almonds, pecans, chia seeds, flax seeds, flaked coconut to a large fry pan and gently stir as it warms and roasts the dry ingredients.
Transfer to a large bowl and mix in to taste: cinnamon, agave, honey, maple syrup, dried cranberries, apricots, goji berries, citrus zest.
