Peach Power Meal | Pie

Summer pies are a staple for the home baker, Midwestern Fair blue ribbon winners, KCRW’s Evan Kleinman, and my father.  His birthday was yesterday and he had pie as his breakfast of choice.  He has been know to eat half a pie for dinner, and half for breakfast, consecutively.  So, yes, it would be a good idea to bake two pies at a time.

The first recipe, Peach Pie, is from my sister.  The second “power meal” recipe is my “pie alternative.” On the mornings my dad doesn’t eat pie, he eats oatmeal with fruit to taste the essence of pie every morning until a special occasion or a vacation comes along and pie can be justified.

Peach Pie Recipe

Mix 8 peaches sliced with three tablespoons of cornstarch and half a cup of sugar.  Place in a crust and lay a second crust across the top.   Slice the top crust to let the steam out.  Overstuff your pie for a plump and peachy dish.

Peaches & Grains Recipe

Grains (oatmeal, brown rice, eyc.) diced peaches, milk, splash of agave , honey or maple syrup, cinnamon, chia or flax.
