Charlotte’s Vanilla Cupcakes + Blackberry Frosting

Charlotte entered the Ventura County Fair‘s King Arthur Flour Cupcake Baking Contest this year.  Her cupcakes were decorated with edible violets from our garden.  We were able to read notes about her cupcakes afterwards.  While the judges complimented the delicate decoration and highly complimented her frosting, they thought the cupcakes were nicely moist, but too heavy, perhaps over-stirred, and overfilled.  We learned that big, dense cupcakes will not get you a place in a contest, but that friends and family will enjoy sampling these flavorful treats.  In addition, the accomplishment of baking and being judged for a contest was very rewarding for us all.

 Vanilla Cupcake Recipe

The recipe is for a sheet cake that can be made the same way, then baked for a little less time in lined cupcake pans.

Blackberry Frosting Recipe

I used one cup of fresh blackberries, 2 sticks of butter, and one pound of powdered sugar.  I whipped the sugar and butter in a mixer while preparing the berries.  Wash berries and puree them in a food processor.  Then, strain them through a seive and stir the juice into the sugar/butter mixture.
