Soft Chocolate Cookies with White Chocolate Chips
I was asked to make a chocolate cookie for Heath’s Tea Room in my baking endeavors there, and while I started with a crazy chocolate fudge brownie (we call it “crazy chocolate”), I recently made this cookie for the tea trays, that came out amazing. The recipe I have used for years that included dried cherries, but I left it out for the tea trays.
Soft Chocolate Cookies with White Chocolate Chips Recipe
• 1 cup (2 sticks) butter, softened
• 2 cups white sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 3/4 cup cocoa
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups white baking chips
Heat oven to 350 degrees.
Beat butter and sugar in large bowl until creamy. Add eggs and vanilla; beat until light and fluffy. Stir together flour, cocoa, baking soda and salt. Gradually beat into butter mixture. Stir in white baking chips. Drop by rounded teaspoons onto ungreased cookie sheet, or parchment lined baking sheets.
Bake for 8 to 9 minutes (In my oven 6 minutes turned out to be just right). (Do not overbake, cookies will be soft. They will puff up while baking, flatten upon cooling.) Cool slightly ; remove from cookie sheet to wire rack. Cool completely. Makes about 5 dozen cookies.
