Cornmeal Applesauce Waffles with Blueberries

These are our mom’s favorite waffles because the cornmeal binds the batter well.  You can see in the image that she eats Facon Bacon, made with soy, and pure maple syrup on top.  Our mom lived in Woodstock, Vermont for five years, where she, now, sources high quality maple syrup for recipes like these.  She made waffles for us often when we were growing up. We had a heavy, cast iron waffle maker that sat on the gas stovetop.  Today, I use an electric waffle maker, and I believe she does, too.  Waffles are a timeless comfort food.  The smell of waffles always brings me back to our childhood kitchen.

Cornmeal Applesauce Waffles with Blueberries Recipe

Mix 2 ½ c flour, 1 ½ c cornmeal, 4 tsp baking powder, 2 tsp salt, 1 tsp cinnamon

Add 1 c applesauce, ½ c melted butter, 2 ½ c milk, 4 beaten eggs (may add blueberries or other fruit)

Beat till smooth

Bake on waffle iron

Combine 6 c applesauce with 2 tsp cinnamon and heat.

Serve on waffle with warm syrup

Serves 6
