Roasted Banana Bars
The roasted bananas alone make this recipe worth your time. Bananas, brown sugar, and butter in an oven make for a decadent aroma. Note that I used olive oil instead of butter, which made them drier, I believe, but healthier. Of course, my husband slathered butter all over his, so, hard to say which is the way to go. Regardless, the subtle flavor of the roasted bananas set these apart from a standard banana bread or muffin recipe.
Roasted Banana Bars Recipe
3 rioe bananas
1/3 cup packed dark brown sugar
1 tablespoon butter, chilled and cut into small pieces
2 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 cup nonfat buttermilk
1 teaspoon vanilla extract
1/2 cup olive oil
1 1/4 cups granulated sugar
2 large eggs
Roast Bananas: Place banana, brown sugar, and 1 tablespoon butter in a baking dish. Bake at 400° for 35 minutes, stirring midway.
Reduce the oven temperature to 375°.
Mix 2 1/4 cups flour, baking soda, and baking powder in a medium bowl.
Combine banana mixture, buttermilk, and 1 teaspoon vanilla in another medium bowl.
Place 1/2 cup butter and granulated sugar in yet another bowl. Beat with a mixer.
Add eggs to granulated sugar mixture.
Add flour mixture to sugar mixture alternating with banana mixture.
Pour batter into a 13 x 9–inch greased baking. Bake at 375° for 20 minutes or until a wooden pick inserted in center comes out clean.
