Feta Cheese Spread

I learned to make this from a German friend, Claudia, when I lived on Catalina Island. She would serve it on a homemade hearty, seeded, bread. This simple spread makes a fantastic lunch. I like to serve mine on rye crackers topped with fresh veggies, like sliced cucumbers & cherry tomatoes, when I donโ€™t have fresh bread.

Feta Cheese Spread Recipe

Mash together French feta cheese (made of sheepโ€™s milk, this is key!), flax seed oil and green onions to taste.
