Radish Leaf Pesto
Diana emphasizes using all parts of the vegetable when she cooks. She says about radishes, “Why waste the green deliciousness!”
Radish Leaf Pesto Recipe
Put a bunch of radish leaves, washed and dried in a salad spinner.
Add 2 cloves of garlic, 1/4 cup of pine nuts, 1/4 cup of parmesan, lemon zest, a couple of glugs of olive oil and hot pepper flakes (optional). Blend in a food processor, taking the time to stop and scrape down the sides. Add to conventional pasta, zucchini spirals or add it to my favorite potato and cauliflower mash.
