Chickpea Salad Sandwich with Dill & Onion
Chickpeas are mashed and used as a protein base in this sandwich. I found this recipe in the Oh She Glows Cookbook by Angela Lidden. It’s brilliant. I really liked this sandwich and plan to make it more often as an easy meal, filled with vegetables. It would be a great substitute for anyone who wants the mustard/dill flavors of a tuna or egg salad sandwich, but doesn’t want to eat tuna or eggs. My husband asked a few times if this sandwich had eggs in it. He was sure it did, but no. Rather, it’s a nice way to intake some garbanzo beans.
Chickpea Salad Sandwich with Dill & Onion Recipe
Drain, rinse, & mash chickpeas. Add Veganaise, mustard, & pickle relish, as you would tuna salad. Finely chop vegetable & herbs to add to the mixture. I used carrots, celery, onions, dill, & parsley. Sprinkle a pinch of salt and mix it all together. I used a pita to hold it all in, but any bread, crackers, tortilla, or lettuce leaf will work.
