Lemon Chicken Tacos with Peach & Onion
These are easy. One of those meals that can be made last minute, if you have cooked chicken on hand.
Lemon Chicken Tacos with Peach & Onion Recipe
Start with a skillet and a splash of olive oil. Add diced onions. Chop enough chicken for the number of tacos you want to make, and a little less quantity of peaches. Add these to the pan and squeeze lemon juice in. Cook for ten minutes or so to warm it all and scoop into taco shells. I crisped corn tortilla shells and chopped lettuce on the side. The lettuce has a dressing of sesame oil & rice vinegar. It’s a nice complement to the peach/lemon flavor of the tacos. You will enjoy the flavor of this meal.
