Lemon & Carrot Chicken Sandwich Recipe
Start with a big splash of olive oil in a cast iron skillet and add a diced onion on low-ish heat. Slice one lemon in big, round slices and lay them on the onions. Rinse & add two large chicken breasts to the center of the skillet. Slice a few carrots and add them around the sides of the chicken. Grind lemon pepper over it all.
Let it cook a few minutes to brown the bottom of the chicken, then put the skillet in an oven preheated to 450 degrees. Bake for about thirty minutes, until the chicken is done.
Slather fresh sourdough bread with Veganaise and place chicken, carrots, & onions, scraped from the pan, on the sandwich. The lemon flavor comes through and this sandwich is really good. Surprisingly good. Really! 🐓
