Cheddar & Green Garlic Biscuits with Cornmeal
This recipe demonstrates a way to make biscuits with very little butter, using cheese instead. The cornmeal gives it an earthy crunch, and the green garlic adds a final, and subtle punch.
Cheddar & Green Garlic Biscuits with Cornmeal Recipe
Combine the dry:
1 1/2 cups flour
1/2 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Grate 1/2 cup cheddar cheese and add to a food processor with 2 tablespoons butter.
Add the dry to the cheese & buttrr in the food processor. Pulse until in small crumbles throughout.
Put in a large bowl and add 3/4 cup plain yogurt, 1/4 cup finely chopped green garlic (or any herb of your choice), and 3 tablespoons milk.
Gently mix the mess with your hands until you can press it onto a floured surface in a 1/2 inch thick spread of dough. Use a cookie cutter or a knife to make shapes and put on a cookie sheet. Bake 12- 16 minutes at 400 degrees.
