Mango Lemon Squares

Fresh mangos added to lemon squares adds a new layer of sweetness, and is well worth the effort required to dice a mango.  Lemon squares are our dad’s favorite dessert.  He ate 12 of these at the Easter potluck, and, I am pretty sure, he ate more once he got home.

Mango Lemon Squares Recipe

Beat these in a mixer:

2 cups flour

1 cup powdered sugar

2 sticks butter

Once mixed, spread in the bottom of a greased pan.  Bake for 20 minutes (until golden) at 350.

In a separate bowl make the lemon custard by mixing these ingredients:

4 eggs

1 cup powdered sugar

1/4 cup flour

1/2 teaspoon baking powder

1/4 cup lemon juice

1 teaspoon grated lemon rind (zest)

2 cups diced fresh mango

When the pan comes out of the oven, pour this lemon mango mixture over it and put back in the oven for about 25 minutes.  It should be cooked until the lemon mango topping is just firm, doesn’t move much when the pan is slightly jiggled.  Wait for the pan to completely cool before cutting.
