Fruit & Vegetable, Cinnamon & Brown Sugar Muffins
We often make muffins as a snack when we have over-ripe bananas. We eliminate eggs and use olive oil instead of butter, but more fruits and vegetables help to “health” it up even more. This recipe still makes these muffins a sweet treat experience.
Fruit & Vegetable, Cinnamon & Brown Sugar Muffins Recipe
Mix in a bowl:
1 1/2 cups wheat flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
Mash together or put into a mixer:
3 ripe bananas
splash of vanilla
1/2 cup brown sugar
3/4 cup milk or yogurt
1/4 cup olive oil
Dice and/or grate vegetables & fruit to fold in at the end. We used carrots, zucchini, strawberries, & raisens.
Bake at 350 degrees for 20-30 minutes.
