 Banana Mango Oatmeal Muffins

I find muffins to be the easiest food to bake. Mix up some wet ingredients. Mix up some dry ingredients. Fold them together to make the batter. Fill a tin and bake. They don’t take long to put together or to bake, and often are surprisingly good!

Banana Mango Oatmeal Muffins Recipe

1 1/2 cups white flour (can substitute for gluten free rice flour)

1 cup oats (not quick cooking kind)

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon nutmeg + 1/4 teaspoon ground ginger (or use all nutmeg)

1/4 teaspoon salt

2 large ripe bananas

2 cups chopped mango (I used frozen and it worked well.)

1/4 cup olive oil (vegetable oil works.  I just use olive oil for everything.)

1/4 cup maple syrup or honey

1/4 cup warm water

1 egg

1 teaspoon vanilla

Heat oven to 400 degrees.

Mash bananas and add all of the other wet ingredients to bananas.

In a separate bow, miix all dry ingredients together.

Pour wet ingredients into dry ingredients and mix gently until just combined.  (If you stir too vigorously, they will turn out tough.)

Scoop into muffin tins.

Check for doneness after 20 minutes.
